Serves Tool

Serves To:USMetric
1 Cup(c)  sugar
3/4 Cup(c)  butter flavored shortening, softened
1 Teaspoon(t)  vanilla
2   eggs
2 1/2 Cup(c)  all purpose flour
1 Teaspoon(t)  baking powder
1 Teaspoon(t)  salt
4   ring shaped hard candy

Mix sugar, shortening, vanilla and eggs in large bowl. Stir in flour, baking powder and salt. Cover and refrigerate at least 1 hour. Heat oven to 375°F. Line a cookie sheet with aluminum foil. Roll dough 1/8 inch thick on lightly floured surface. Cut into desired shapes with cookie cutters. Place on cookie sheet. Cut out designs from cookies using smaller cutters or your own patterns. Place whole or partially crushed candy in cutouts, depending on size and shape of design. (To crush candy, place in heavy plastic bag and tap lightly with rolling pin. Because candy melts easily, leave pieces as large as possible.) If cookies are to be hung as decorations, make a hole in each, 1/4 inch from top with end of plastic straw. Bake 7 to 9 minutes or until cookies are very light brown and candy is melted. If candy has not completely spread within cutout design, immediately spread with metal spatula. Cool completely before removing from cookie sheet. Remove cookies gently.

Additional notes

Variations: Substitute 1/2 teaspoon lemon extract for the vanilla, for a subtle citrus flavor. If you like, you can use tiny round hard candies in place of the ring shaped candy, but you'll need more tubes of the round candies.
