Recipe Description
This is my go-to holiday mashed potato recipe. It's easy to assemble and cook, reheats well, and is full of garlicky goodness. Premaking hte potatoes really brings out the garlic flavor!

Ingredients

1 Dash(ds)  pepper
1 Teaspoon(t)  salt
1/2 Cup(c)  butter
1/2 Cup(c)  heavy cream
3/4 Cup(c)  milk
8 Clove(clv)  garlic peeled
3 Pound(lb)  red potatoes

Preparation

In 3-quart saucepan, place potatoes and garlic; add enough water to cover. Heat to boiling; reduce heat. Cover; cook 20 to 25 minutes or potatoes are until tender. (Cooking time will vary depending on size of potato pieces and type of potato used.) Drain and return to saucepan.

Heat potatoes over low heat about 1 minute, shaking pan often to keep potatoes from sticking and burning, to dry potatoes (this will help make mashed potatoes fluffier). Mash potatoes and garlic in pan with potato masher or electric mixer on low speed 1 to 2 minutes or until no lumps remain.

In 1-quart saucepan, heat milk, whipping cream, butter, salt and pepper over medium-low heat, stirring occasionally, until butter is melted; reserve and refrigerate 1/4 cup mixture. Add remaining milk mixture in small amounts to pota-toes, mashing after each addition, until potatoes are light and fluffy.

Spray 2-quart casserole with cooking spray. Spoon potatoes into casserole; cover and refrigerate up to 24 hours. Potatoes can be baked immediately.

Heat oven to 350°F.

Pour reserved milk mixture over potatoes. Bake uncovered 40 to 45 minutes or until hot. Stir potatoes before serving.
