Recipe Description
Americans of Jamaican origin have inherited a host of great recipes for tropical quick breads, such as banana bread, gingerbread, corn bread, pumpkin bread and coconut bread. One winning bread that deserves more fanfare is enhanced with mango, a fruit that is the basis of numerous Jamaican sweets. While orange-yellow mango usually takes center stage in most versions of Jamaican mango bread, we have added pecans to create a play of tastes and textures. Moist and richly flavored, this bread makes a superb brunch or coffee break treat served plain or with a slathering of sweet butter or whipped cream cheese.

Ingredients

2 Cup(c)  unbleached all purpose flour
1 1/2 Teaspoon(t)  baking soda
2 Teaspoon(t)  cinnamon, ground
1/2 Teaspoon(t)  salt
1/2 Cup(c)  vegetable oil
3   medium eggs
3/4 Cup(c)  granulated sugar
1 Teaspoon(t)  vanilla extract
2 Cup(c)  ripe mango, peeled, sliced from the pit and diced
1/2 Cup(c)  shelled pecans, coarsely chopped

Preparation

Sift the flour, baking soda, cinnamon and salt together in a large mixing bowl. Beat the vegetable oil, eggs, sugar and vanilla extract in a medium mixing bowl until well blended. Add the oil and egg mixture to the dry ingredients, stirring just until they are blended. Lightly fold in the diced mango and pecans. Pour the batter into a greased and lightly floured 4 1/2 by 8 1/2 inch loaf pan. Bake the bread on the center rack of a preheated 350° F oven for 1 hour, to 1 hour and 10 minutes, or until a wooden skewer inserted in the center comes out clean. Remove the bread from the oven and cool it in the pan on a wire rack for 10 minutes. Turn the bread out onto the wire rack and allow it to cool completely. Serve plain or with the topping of your choice.
