This moist tea bread is flavored with sweet mango, coconut and raisins. A nice tropical touch to your next ladies luncheon or afternoon tea.

10 121/2000 Gram(g)  plain flour
2 Teaspoon(t)  bicarbonate of soda
2 Teaspoon(t)  cinnamon, ground
1/2 Teaspoon(t)  salt
4 119/2000 Gram(g)  margarine, at room temperature
3   eggs, at room teluperature
10 59/100 Gram(g)  sugar
25 Teaspoon(t)  vegetable oil
1   large ripe mango, peeled and chopped
3 442499999999999/2500000000000000 Gram(g)  desiccated coconut
2 471/1000 Gram(g)  raisins


Preheat the oven to 350° F. Line the bottom and sides of two 9 by 5 inch loaf tins with greaseproof paper and grease. Sift together the flour, bicarbonate of soda, cinnamon and salt. Set aside. With an electric mixer, cream the margarine until soft. Beat in the eggs and sugar until light and fluffy. Beat in the oil. Fold the dry ingredients imo the creamed ingredients in 3 batches. Fold in the mango, two-thirds of the coconut and the raisins. Spoon the batter into the pans. Sprinkle over the remaining coconut. Bake until a skewer inserted in the center comes out clean, 50 to 60 minutes. Let stand for 10 minutes before turning out onto a rack to cool completely.
