Recipe Description
Sometimes the less you do to fruit pies, the better they are. This recipe is a case in point. All that's needed are ripe peaches and a little honey. Anything more would detract from the inherent goodness of the fruit

1/3 Cup(c)  maple syrup
15 Cup(c)  ripe peaches
1 1/2 Tablespoon(T)  cornstarch
2   9 inch pie crust, rolled


Preheat the oven to 425°F.

Drop the peaches in a pot of boiling water for15 seconds.

Remove immediately and peeL Cut in quarters making sure to remove the pit.

Toss the peaches with the maple syrup and corn starch.

Set the bottom crust in a pie pan and prickthe bottom. Fill the pie crust with the peaches.

Place the upper crust on the pie and flute theedges, or seal them with the tines of a fork. Cut a steam vent in the top crust.

Bake for 20 minures, then reduce the temperature to 350°F and bake for 30 to 40 minutes longer, until the crust browns and the pie bubbles.
