Recipe Description
This recipe gives American olives a distinctive Greek flavor.  These make a great gift to give friends during the holidays.

Ingredients

2 Tablespoon(T)  oregano, dried
1 1/2 Cup(c)  balsamic vinegar
1 Cup(c)  olive oil
1   whole lemon, cut into small pieces
2   lemons, juiced
4 Clove(clv)  garlic, minced
3   stalks celery, finely chopped
1 Pound(lb)  large black olives

Preparation

Drain olives and, if they are not pitted, slit one side with a knife to allow marinade to penetrate olive.  Mix remaining ingredients together and stir into olives.  Pack entire mixture into jars, making sure liquid completely covers olives.  Add a little water if necessary.  Cover and allow to marinate for 2 to 3 weeks, shaking jars every few days.  Serve at room tempeature in decoative dish.
