Recipe Description
Mashed sweet potatoes are a traditional staple for the holiday table, but they make an excellent side dish all throughout the year.  This recipe adds a hint of lemon flavor and leaves out all the extra sugary toppings.  A far healthier version of a well loved vegetable!

1 Tablespoon(T)  lemon rind, grated (optional)
4   sweet potatoes, boiled and skinned
4 Tablespoon(T)  unsalted margarine
1/2 Cup(c)  cream
1/2   lemon, juiced
1 Pinch(pn)  pepper, to taste
1 Pinch(pn)  salt, to taste


In a saucepan, combine cream or non-dairy creamer with salt, pepper and margarine.  Bring to a boil and cook until tender, about 15 minutes.  Mash potatoes in a bowl.  Add liquid and mash more.  Add lemon rind and lemon juice.  Serve hot.
