Use a variety of greens to make this delicious salad. Serve on small plates with crusty French bread.

6 Cup(c)  mixed leafy greens, rinsed
10   cherry tomatoes, halved
1   small onion, cut into thin strips
1   small cucumber, sliced
2   medium carrots, peeled and shredded
1/2 Cup(c)  alfalfa or mung bean sprouts
1 Cup(c)  chickpeas, drained
3 Tablespoon(T)  balsamic vinegar, to taste


Place the greens in the center of a large salad bowl and arrange the tomatoes, onion, cucumber, carrots and sprouts around the edge. Sprinkle the chickpeas over the center. Drizzle the vinegar over the greens and vegetables.
