Mexican Quiche

Recipe Description
This is a mexican spin on classic French quiche. Chunks of chorizo sausage, mild green chiles, and whole kernels of corn give the tender jack cheese custard a south-of-the-border flair.

3 Cup(c)  shredded jack cheese avocado and tomato slices cilantro sprigs
2   medium-size onions, chopped
1 Tablespoon(T)  salt
1/3 Teaspoon(t)  pepper
1/4 Cup(c)  diced fresh mild green chiles or canned diced green chiles
10   eggs
4 Ounce(oz)  whole-kernel corn, drainededoved
4 Ounce(oz)  sliced ripe olives, drainedoved
2 Cup(c)  milk
1 Pound(lb)  chorizo sausages, casings removed


Crumble chorizo into a wide frying pan and cook over medium-high heat, stirring often, until browned.

Add onions and cook, stirring often, until soft (about 4 minutes).

Discard fat.

Stir in salt, pepper, and chiles. Remove from heat.

In a large bowl, beat eggs and milk until blended.

Stir in chorizo mixture, olives, corn, and cheese. Evenly spread mixture in a greased 10- by 15-inch rimmed baking pan.

Bake in a 375 degree oven until a knife inserted in center comes out clean (25 to 30 minutes). Let stand for 10 minutes before serving.

To serve, cut into squares and garnish with avocado, tomato, and cilantro sprigs.
