Recipe Description
Here's an ideal first course for a formal autumn dinner.  Hollowed out tiny pumpkins make whimsical bowls for a creamy pumpkin puree.  At the table, you lift the tops from the little "tureens" to reveal the soup inside.  To keep soup hot, rinse shells with boiling water before you fill them.

Ingredients

6   mini pumpkins (3/4 to 1 pound each)
2 Tablespoon(T)  butter
1   large onion, sliced
4 Ounce(oz)  pimentos, diced and drained
1/4 Teaspoon(t)  pepper
1 3/4 Cup(c)  chicken broth
1 Cup(c)  milk
1 Teaspoon(t)  nutmeg, ground

Preparation

Cut a lid about 3 inches in diameter from the top of each pumpkin.  Trim undersides of lids to make them about 1/2 inch thick.  Reserve pumpkin flesh.  Scrape out and discard seeds and strings from pumpkins.  With a short, sharp knife, hollow out pumpkins to leave 1/2 inch thick shells.  Cut up any large pieces of pumpkin flesh.  Set aside tops, shells and flesh.  Melt butter in a 3 to 4 quart pan over medium high heat.  Add onion and cook, stirring often, until soft, about 4 minutes.  Add pimentos, pepper, broth and pumpkin flesh.  Bring to a boil over high heat, then reduce heat, cover, and simmer until pumpkin is very tender when pierced, about 15 minutes.  In a blender or food processor, whirl pumpkin mixture until smoothly pureed.  Return to pan and stir in milk.  Heat soup over medium high heat, stirring constantly, until steaming.  To serve, fill pumpkin shells with boiling water, then drain well and place on individual plates.  Ladle soup into shells.  Sprinkle soup with nutmeg, then cover each shell with a lid.
