Recipe Description
A versatile side dish that can be served at room temperature, or chilled. The color combination of bright green peas and pearl white barley, is an excellent serving choice during the festive winter holidays.

Ingredients

3/4 Cup(c)  medium pearl barley
10 Ounce(oz)  frozen petite green peas, unthawed
1   small red onion, finely diced
2   medium stalks celery, finely diced
1/4 Cup(c)  olive or vegetable oil
3 Tablespoon(T)  red wine vinegar
1 Tablespoon(T)  fresh mint, minced
1/4 Teaspoon(t)  salt
2 Cup(c)  cheddar cheese, cubed
3/4 Cup(c)  roasted peanuts or walnuts, coarsely chopped
2   medium tomatoes, seeded, drained and diced
4   sprigs mint (optional garnish)
1/4 Teaspoon(t)  black pepper

Preparation

Cook the barley according to package directions in a large saucepan over moderate heat, adding the peas, onion, and celery during the last 3 minutes. Drain all well. Place the barley and vegetables in a large bowl, add the oil, vinegar, chopped mint, salt and pepper, and toss well. Add the cheese, peanuts, and tomatoes and toss well again. Garnish with the mint if desired. Serve cold or at room temperature.
