1/4 Cup(c)  raisins
1 Tablespoon(T)  apple cider vinegar
1 Cup(c)  plain soy milk
1 Cup(c)  whole wheat pastry flour
3/4 Cup(c)  oats, ground
2 Teaspoon(t)  cinnamon, ground
1 Teaspoon(t)  ginger, ground
1 Teaspoon(t)  baking powder
1 Teaspoon(t)  baking soda
1/2 Teaspoon(t)  fine sea salt
1/2 Cup(c)  blackstrap or regular molasses
2 Tablespoon(T)  canola oil
1/4 Cup(c)  raisins
1/4 Cup(c)  pecans or walnuts, chopped

Preparation

Preheat the oven to 350°F (180°C, or gas mark 4). Lightly coat an 8-inch (20-cm) square baking pan with spray. Combine the vinegar and milk in a medium-size bowl; it will curdle and become like buttermilk. Whisk the flour, ground oats, cinnamon, ginger, baking powder, baking soda, and salt in a largesize bowl. Whisk the molasses and oil into the buttermilk mixture. Fold the wet ingredients into the dry, being careful not to overmix. Fold in the raisins and nuts, if using. Pour the batter into the prepared pan. Bake for 25 minutes, or until a toothpick inserted into the center comes out clean. Place on a wire rack, still in the pan, for about 15 minutes before transferring directly to the rack, and let cool completely before slicing or storing... Yield: 6 servings
