Recipe Description
I always loved sitting in the kitchen when my mom was making her zucchini bread.  This is her recipe, and one I genuinely enjoy preparing for my childen, today.

Ingredients

1/2 Cup(c)  nuts, chopped
1 Teaspoon(t)  cinnamon
1 Teaspoon(t)  baking soda
1/4 Teaspoon(t)  baking powder
3 Cup(c)  flour
2 Cup(c)  zucchini, peeled and grated
1 Teaspoon(t)  vanilla
1 Cup(c)  oil
2 Cup(c)  sugar
3   eggs

Preparation

Preheat oven to 325°F.  Beat eggs in a mixing bowl until light.  Add sugar, oil, vanilla and zucchini.  Mix well.  Sift flour, baking powder, baking soda and add to batter.  Add cinnamon and nuts.  Pour into a greased and floured loaf pan.  Bake in a 325°F oven for 1 hour.  Bread done wnen tooth pick inserted in center comes out clean.
