2 Cup(c)  carrots, coarsely shredded
1/2 Cup(c)  golden raisins
2 Tablespoon(T)  fresh mint, chopped
2 Tablespoon(T)  extra virgin olive oil
1 1/2 Tablespoon(T)  fresh lemon juice
1 Clove(clv)  garlic, minced
1/2 Teaspoon(t)  sugar
1/4 Teaspoon(t)  cinnamon, ground
1/8 Teaspoon(t)  cumin, ground
1/8 Teaspoon(t)  salt, or to taste
1/8 Teaspoon(t)  red pepper, ground

Preparation

In a large bowl toss together the carrots, raisins and mint. In a small bowl, stir together the remaining ingredients. Pour the dressing over the salad and toss to combine.
