Recipe Description
Not only is this a clever looking way to serve meatloaf, but it is practical too. It can be prepared a day ahead of time, or the uncooked portions can be frozen, giving you readily available individual servings. Also, portion control is of no issue, as it is obvious how much is a serving. Mostly, though, I like this recipe because it looks so cute on the plate.

Ingredients

1 1/2 Pound(lb)  lean ground turkey
1/2 Pound(lb)  10% fat ground beef
1 Cup(c)  zucchini, shredded
1/2 Cup(c)  carrots, shredded
2   egg whites
1 Cup(c)  soft bread crumbs
1 Tablespoon(T)  worcestershire sauce
1 Teaspoon(t)  poultry or italian seasoning
1/4 Cup(c)  ketchup

Preparation

Combine the turkey, beef, shredded vegetables, egg whites, bread crumbs, Worcestershire
sauce and poultry seasoning. Using your hands, squeeze together almost as if kneading bread,
until evenly mixed. Pack the meat mixture into 12 muffin cups. There is no need to grease the pans. These can be made up to one day in advance. If doing so, cover tightly and refrigerate. Just prior to baking, top with the ketchup. Preheat the oven to 400 degrees F. Bake 30 minutes. Unmold from muffin cups and serve.
