Recipe Description
Experiment with the type of mushrooms used for these dumplings.  I prefer to use crimini mushrooms, but chantrelles are also good.  If possible, stick with wild choices, as white button mushrooms tend to taste rather bland.

1 Teaspoon(t)  butter
3 Tablespoon(T)  mushrooms, chopped
2/3 Cup(c)  flour
1/4 Teaspoon(t)  salt
2   medium eggs, separated
2 Tablespoon(T)  soft butter


Cream the butter with the egg yolks, add salt.  Saute mushrooms in butter.  Add to the dough.  Add small portions of whipped, stiff egg whites and flour alternately.  Mix lightly.  Drop small portions of the dough from a teaspoon into a boiling soup.  Cook uncovered on high heat till dumplings float.
