Recipe Description
The quiche is flavorful aand add the mushrooms with jsut the right earthy flavor and you have a great mushroom quiche recipe.

Ingredients

1 Cup(c)  mushrooms
2 Tablespoon(T)  olive oil
1 Tablespoon(T)  butter
1 Clove(clv)  garlic, finely chopped
2 Ounce(oz)  parmesan cheese, grated
2 Tablespoon(T)  finely chopped parsley
   3 eggs
1 Dash(ds)  salt
2/3 Cup(c)  plain flour
1 1/2 Ounce(oz)  cold margarine, cut into pieces
3 Tablespoon(T)  iced water
3 Ounce(oz)  cold butter, cut into pieces
1 Tablespoon(T)  lemon juice
1 Dash(ds)  pepper

Preparation

For the crust, sift the flour and salt into a bowl. Rub in the butter and margarine until the mixture resembles coarse breadcrumbs. Stir in just enough water to bind.

Gather into a ball, wrap in clear film and refrigerate for 20 minutes.

Preheat a baking sheet in a 375°F

Roll out the dough 1/8 inch thick. Transfer to a 9 in  tin and trim.

Prick the base all over with a fork.

Bake for 12 minutes. review crust and continue baking until golden, about 5 minutes more.

Wipe the mushrooms with damp kitchen paper to remove any dirt.

Trim the ends of the stalks, place on a cutting board, and slice thinly.

Heat the oil and butter in a frying pan. Stir in the mushrooms, garlic and lemon juice. Season with salt and pepper. Cook until the mushrooms render their liquid, then raise the heat and cook until dry.

Stir in the parsley and add more salt and pepper if necessary.

Whisk the eggs and cream together, then stir in the mushrooms.

Sprinkle the cheese over the borrom of the prebaked shell and pour the mushroom filling over the rap.

Bake until puffed and brown, about 30 minutes.

Serve the quiche warm.
