Recipe Description
These muffins are simply delicious!  My grandma made these for me when I was a child.  When I became older, I made them for her as a special Mother's Day treat.

Ingredients

1 1/2 Teaspoon(t)  cinnamon
1/2 Cup(c)  low fat margarine
1/2 Cup(c)  all purpose flour
1 Cup(c)  frozen blueberries
2 Tablespoon(T)  canola oil
1 1/2 Cup(c)  fat free milk
2   egg whites
1 Teaspoon(t)  cinnamon
3 Tablespoon(T)  sugar
1 Teaspoon(t)  baking soda
2 Teaspoon(t)  low sodium baking powder
1/2 Cup(c)  whole wheat flour
1 1/2 Cup(c)  all purpose flour

Preparation

Preheat oven to 400°F.  Combine 1 1/2 cups of all purpose flour with the whole wheat flour in a large bowl.  Add the baking powder, baking soda, sugar and 1 teaspoon cinnamon.  In a separate bowl combine the egg whites, milk and oil.  Make a well in the center of the dry ingredients, and add the egg mixture.  Stir until just combined.  Fold in the blueberries carefully with a wooden spoon.  Pour into muffin tins.  In a separate bowl combine 1/2 cup of all purpose flour with the margarine and 1 1/2 teaspoons of cinnamon.  Sprinkle over the muffins.  Bake for 20 to 25 minutes.
