Recipe Description
In many households, it is considered good luck to start the New Year by eating black-eyed peas. I consider this recipe to be good fortune, because I can clear the holiday leftovers out of the refrigerator!

1 Cup(c)  cooked turkey or ham, chopped
1 Cup(c)  onion, finely chopped
1/2 Cup(c)  celery, finely chopped
1/2 Teaspoon(t)  hot sauce
1 Tablespoon(T)  canola oil
30 Ounce(oz)  black-eyed peas
3 Cup(c)  cooked rice

Preparation

Saute turkey or ham, onions, celery and hot sauce in oil in a skillet over medium heat for 3 to 5 minutes, stirring frequently, until the onions and celery are soft but not browned. Combine black-eyed peas, turkey mixture and rice, then heat.
