2 1/2 Cup(c)  fat free milk, scalded
1/2 Cup(c)  low fat margarine
3/4 Cup(c)  honey
2 Package(pk)  dry yeast
1 3/4 Cup(c)  oat bran
3 Cup(c)  oat flour
2 Cup(c)  hot water
1/2 Cup(c)  eggs substitute
1 Cup(c)  nuts, chopped
3 Cup(c)  all purpose flour


Combine the scalded milk, margarine and honey in a bowl. Cool to lukewarm. Combine the yeast, oat bran and the oat flour in a separate bowl. Add hot water to yeast mixture. Whisk into the lukewarm liquid. Add the egg substitute and mix well. Add nuts and mix well. Add the allpurpose flour and mix well by hand. This will make a stiff dough. Turn dough out onto a floured surface and knead for approximately 10 minutes, or until smooth in texture. Place in an oiled bowl, cover, and let rise until double in bulk, approximately 1 hour. Punch down dough and form into 2 loaves. Place in loaf pans and allow to double in size. Preheat the oven to 375° F. Bake for 30 to 35 minutes, or until golden brown. Cool on a wire rack for at least 1 hour before slicing.
