These crunchy cookies are easy enough for children to make and are sure to disappear as soon as they are baked. They make an ideal quick, easy and cheap dessert when served with ice cream.

1 Pinch(pn)  salt
1 Teaspoon(t)  baking powder
1 1/4 Cup(c)  all purpose flour
1/2 Cup(c)  dark brown sugar, softened
1 Cup(c)  pecans, chopped
6 Ounce(oz)  semisweet chocolate chips
1 Cup(c)  rolled oats
1 Teaspoon(t)  vanilla essence (extract)
4 Tablespoon(T)  milk
2   eggs, lightly beaten
1/2 Cup(c)  butter, plus extra for greasing


Cream the butter and sugar in a large bowl until pale and fluffy. Add the beaten eggs, milk and vanilla essence, and beat thoroughly. Sift in the flour, baking powder and salt, and stir in until well mixed. Fold in the rolled oats, chocolate chips and chopped pecans. Chill the mixture in the refrigerator for at least 1 hour. Preheat the oven to 350°F. Grease two large baking trays. Using two teaspoons, place mounds of the mixture well apart on the trays and flatten with a spoon or fork. Bake the cookies for 10 to 12 minutes in the preheated oven until the edges are just coloring, then cool on wire racks.
