Recipe Description
Oatmeal cookies are one of my favorites, although I do add chocolate chips to the batter. If you want to incorporate chips as well, I suggest 1 cup of semisweet chocolate morsels.

1 Cup(c)  rolled oats
1 Teaspoon(t)  xanthan gum
1/2 Teaspoon(t)  vanilla extract
1/4 Teaspoon(t)  salt
2 Teaspoon(t)  baking powder
1 Teaspoon(t)  baking soda
1 Cup(c)  potato starch
1 Tablespoon(T)  milk
1   egg
1/2 Cup(c)  dark brown sugar
1/4 Pound(lb)  butter


Preheat the oven to 375°F. Grease a cookie sheet. Cream the butter and sugar in a medium-size bowl. Add the egg. Mix until light and thick. Add the other ingredients. Beat until thick and creamy. Drop by rounded teaspoonfuls onto the prepared pan. Press to a lA-inch thickness with moistened fingertips. Bake for 9 to 10 minutes, until lightly browned. Transfer from the cookie sheet to a rack and let cool completely
