1/4 Cup(c)  honey, warmed until easy to pour
2/3 Cup(c)  molasses
1/3 Cup(c)  vegetable oil
1 1/2 Cup(c)  1% low fat milk
1 1/2 Cup(c)  whole wheat flour
2/3 Cup(c)  unbleached, all purpose white flour
1/4 Teaspoon(t)  baking soda
1 1/2 Teaspoon(t)  baking powder
1 Tablespoon(T)  cinnamon, ground
2 Teaspoon(t)  ginger, ground
1/4 Tablespoon(T)  cloves, ground
2   egg whites, beaten to a soft peak


Preheat the oven to 375° F. Coat a 9 by 9 inch pan with non stick spray. Whisk together the honey, molasses, oil and milk. Sift together the flours, baking soda, baking powder, cinnamon, ginger and cloves. Form a well in the center of the dry mixture and pour in the wet ingredients. Fold with a spatula until the batter is moist but still lumpy. Gently fold in the egg whites. This will be a thin batter. Pour the batter into the pan and bake for 1 hour, until firm to the touch.
