2   eggs
1/4 Teaspoon(t)  salt, to taste
1 Cup(c)  oil for frying
4 Cup(c)  potatoes, coarsely shredded
1/8 Teaspoon(t)  pepper, to taste
1/4 Cup(c)  matzoh meal, crumbed matzoh, or crumbed water biscuits
