Recipe Description
A mixture of olives and peppers adds lively color and flavor to this relish.  It's wonderful served with fresh fish dishes, like swordfish or tuna steaks.

Ingredients

1/2 Cup(c)  yellow bell pepper, finely diced
1/4 Cup(c)  kalamata olives, pitted and finely diced
1/4 Cup(c)  green olives, pitted and finely diced
1/4 Cup(c)  red onion, finely diced
2 Tablespoon(T)  capers, drained
1 Tablespoon(T)  basil leaves, dried
1 Clove(clv)  garlic, minced
1/4 Cup(c)  extra virgin olive oil
2 Teaspoon(t)  granulated sugar
1 Teaspoon(t)  red wine vinegar
1 Pinch(pn)  salt, to taste
1 Pinch(pn)  pepper, freshly ground, to taste
2   plum tomatoes, seeded and finely diced

Preparation

Stir together first 8 ingredients in a large bowl.  Whisk together olive oil, sugar and vinegar until blended.  Pour over tomato mixture in bowl, and toss to coat.  Cover and let stand at room temperature 1 hour.  Season with salt and pepper to taste.
