Greek olives add exceptional impact to this traditional bread. Serve with your favorite Greek meal, or sliced thinly and served as an appetizer.

8 Cup(c)  strong white bread flour
1 Package(pk)  dry yeast
3 Teaspoon(t)  sesame seeds
1 Teaspoon(t)  salt
1/2 Teaspoon(t)  oregano, dried
3 Tablespoon(T)  olive oil, plus extra for brushing
2 1/2 Cup(c)  warm water
1 Cup(c)  greek olives, pitted and chopped coarsely


Put the flour, yeast, 2 teaspoons of the sesame seeds, salt and oregano in a large bowl and mix. Add 3 tablespoons of the olive oil and, using a wooden spoon, gradually add the water to form a firm dough. Turn the dough onto a lightly floured work surface and knead for 10 minutes, until smooth. Put the dough in a clean bowl, cover with a clean, damp dish towel, and let rise in a warm place for about 1 hour, until doubled in size. Turn onto a lightly floured surface and knead lightly to knock out the air then knead in the olives. Divide the dough into 2 pieces, and shape each piece into a smooth round. Place on a lightly oiled cookie sheet, cover with a clean dish towel, and set in a warm place for about 30 minutes, until doubled in size. Using a sharp knife, make slashes across the top of each loaf then lightly brush with olive oil and sprinkle the remaining sesame seeds on top. Bake in a preheated oven, 425° F for 10 minutes then reduce the temperature to 375° F and bake for another 25 minutes, or until risen and brown and the bread sounds hollow when tapped on the bottom. Cool on a wire rack.
