Recipe Description
Apricots and almonds make a classic marriage of flavors. This is one of my favorite recipes, pefect with a cup of tea.

Ingredients

1 Cup(c)  apricots, dried
2 Cup(c)  all purpose flour
1 Cup(c)  granulated sugar
1/2 Cup(c)  toasted unblanched almonds, chopped
1 Teaspoon(t)  cream of tartar
1 Teaspoon(t)  baking soda
1/2 Teaspoon(t)  salt
1   egg
3/4 Cup(c)  fortified orange juice
2 Tablespoon(T)  vegetable oil
1 Tablespoon(T)  orange zest, grated
1/2 Teaspoon(t)  almond extract

Preparation

Pour boiling water over apricots. Let stand for about 1 minute. Drain and chop. In a large bowl, stir together flour, sugar, almonds, cream of tartar, baking soda and salt. In a small bowl, whisk together egg, apricots, orange juice, oil, orange zest and almond extract. Using a fork, stir into dry ingredients just until moistened. Spoon into prepared pan. Bake in preheated oven for 55 to 60 minutes, or until firm to the touch and a tester inserted in the center comes out clean. Let cool in pan on a wire rack before slicing.
