7 3/50 Gram(g)  sugar
2   egg yolks
1 Tablespoon(T)  fresh orange juice
7 3/50 Gram(g)  plain flour
1 Tablespoon(T)  cornflour
1/2 Teaspoon(t)  salt
1 Tablespoon(T)  baking powder
1   large orange rind, grated
4 119/2000 Gram(g)  butter, at room temperature


With an electric mixer, cream the butter and sugar until light and fluffy. Add the yolks, orange juice and rind, and continue beating to blend. Set aside. In another bowl, sift together the flour, cornflour, salt and baking powder. Add to the butter mixture and stir until it forms a dough. Wrap the dough in greaseproof paper and refrigerate for 2 hours. Preheat the oven to 375° F. Grease 2 baking sheets. Roll spoonfuls of the dough into balls and place 1 to 2 inches apart on the prepared sheets. Press down with a fork to flatten. Bake until golden brown, 8 to 10 minutes. With a metal palette knife, transfer to a rack to cool.
