1 1/4 Cup(c)  chocolate graham cracker crumbs
1 Cup(c)  all purpose flour
1/4 Cup(c)  unsweetened cocoa powder
2 Teaspoon(t)  baking powder
1/2 Cup(c)  vegetable shortening
1 Teaspoon(t)  pure vanilla extract
1 Teaspoon(t)  pure orange extract
2 Cup(c)  sweetened condensed soy milk
1 Cup(c)  non dairy semisweet chocolate chips
1   orange, zested


Preheat the oven to 375°F (190°C, or gas mark 5). Line 2 or 3 baking sheets with parchment paper or silicone baking mats, such as Silpat. In a mixing bowl, combine the graham cracker crumbs, flour, cocoa powder, and baking powder. In a separate bowl, using an electric mixer, beat together the shortening and extracts, then slowly add the condensed milk. Add the wet ingredients to the dry, and stir to combine. Fold in the chocolate chips and orange zest. Spoon drop about 2 tablespoons (40 g) of cookie dough onto the prepared baking sheets about 3 inches (7.5 cm) apart, because the cookies will spread a lot while baking. Bake for 12 to 15 minutes. Let cool for about 5 minutes before transferring to a wire rack to cool completely.
