Recipe Description
Sweet oranges and crunchy radishes are a delicious flavor combination with visual impact. This is a lovely salad to serve at summer parties or special events.

Ingredients

1 Teaspoon(t)  olive oil
1 Tablespoon(T)  fresh mint, finely chopped
1/2   large seedless cucumber, thinly sliced
1 Bunch(bn)  radishes, thinly sliced
3   large navel oranges

Preparation

Peel oranges. Remove and discard white pith. Separate oranges over a bowl into sections, reserving juice. Place orange sections and 2 Tablespoons of juice in a serving bowl. Gently stir in radishes and next 3 ingredients. Sprinkle with salt and freshly ground black pepper to taste.
