Recipe Description
The color combination of this pea and pasta dish make it a natural choice for serving during the holidays.  If you prefer, substiture roasted red peppers for the pimientos.

2 Tablespoon(T)  fresh parsley, chopped
1/4 Cup(c)  pimientos, chopped
1 Cup(c)  green peas, fresh or frozen
2 3/4 Cup(c)  water
1/4 Teaspoon(t)  turmeric, ground
1/2 Teaspoon(t)  black pepper
1/2 Teaspoon(t)  salt
1/2 Cup(c)  orzo
1 Cup(c)  long grain white rice
2 Clove(clv)  garlic, minced
1   medium yellow onion, chopped
1 Tablespoon(T)  olive oil


In a medium saucepan, heat the oil over medium heat.  Add the onion and garlic and cook, stirring, for 4 minutes.  Stir in the rice, orzo, salt, pepper and turmeric, and cook for 1 minute over low heat, stirring frequently.  Add the water, green peas and pimentos, and bring to a simmer over medium high heat.  Stir the grains, cover and cook over low heat until the grains are tender, about 15 to 20 minutes.  Remove from the heat, fluff the grains, and blend in the parsley.  Let stand for 5 to 10 miutes before serving.
