Recipe Description
The basis of this delicious recipe is simply mashed parsnips, which are made into plump little cakes and fried crispy. Serve hot with crispy bacon, or as an accompaniment to a main course, garnished with sprigs of fresh watercress.

1/4 Cup(c)  flour
1 Pinch(pn)  pepper, freshly ground, to taste
3 Tablespoon(T)  olive oil
1   egg, beaten
1 Cup(c)  white breadcrumbs
1 Pinch(pn)  salt, to taste
4 Tablespoon(T)  butter
1 Pound(lb)  parsnips


Peel the parsnips thinly. Cut them into small chunks and cook in a little boiling salted water until soft. Mash with the butter, season with salt and freshly ground pepper to taste. Wet your hands and shape the mixture into six cakes. Dip each cake into the flour, then the egg, then coat with breadcrumbs. Heat a little olive oil with some butter in a wide frying pan. Fry the cakes on a gentle heat until golden on both sides.
