3/4 Cup(c)  sugar
2 Tablespoon(T)  cake flour, sifted
1/2 Cup(c)  pecans, chopped
1/2 Teaspoon(t)  almond flavoring
1 Teaspoon(t)  vanilla
1/2 Teaspoon(t)  salt
1 1/2 Teaspoon(t)  cream of tartar
1 2/3 Cup(c)  egg whites
3/4 Cup(c)  sugar
2 Tablespoon(T)  cake flour, sifted


Sift the flour and 3/4 cup sugar together four times. Set aside. Combine egg whites, cream of tartar, salt, vanilla, and almond flavoring, and beat until the whites are stiff but not dry. Add 3/4 cup sugar, 2 tablespoons at a time, folding it in well each time. Then add flour-sugar mixture in four parts, folding in the additions with 15 strokes each time. Finally, fold in the pecans. Pour into an ungreased 10 inch tube pan. Gently draw a thin spatula through the batter to break any large air bubbles. Bake at 350 degrees F for 45 minutes. Invert and cool.
