The cheese, seasonings and tomato sauce contrast nicely with the fresh, mild flavor of green beans. Beans can be found in most home gardens. They're a simple to grow, nutritious, low calorie vegetable that can be eaten hot or cold, cooked or raw.

1/2 Teaspoon(t)  sugar
1/4 Pound(lb)  bacon, diced
1/4 Teaspoon(t)  salt
1/8 Teaspoon(t)  black pepper, freshly ground
1 Cup(c)  gouda or provolone, shredded
4 Ounce(oz)  tomato sauce
5 1/2 Pound(lb)  fresh french cut green beans


Preheat oven to 425 degrees F. In a medium saucepan, bring 2 inches salted water to a boil. Add sliced beans and sugar. Bring to a boil over medium heat. Reduce heat to low. Cover beans with a tight fitting lid and simmer 5 minutes, or until almost tender. Drain beans and set aside. In a small skillet, saute bacon over medium heat until crisp. Drain on paper towels. Lightly grease a medium baking dish. Combine bacon, beans, seasonings and one half of the shredded cheese in the prepared baking dish. Sprinkle remaining cheese over bean mixture. Bake, uncovered, 5 to 7 minutes, or until cheese melts and lightly browns. Serve with hot tomato sauce
