When my boys were growing up, I used to make these every Passover as a healthy snack to tuck into a lunchbox, or have with milk after school.

2   large eggs, beaten
2/3 Cup(c)  sweetened coconut, flaked or shredded
1 Cup(c)  pecan halves, chopped
1 Cup(c)  raisins
1 Cup(c)  matzoh meal
1/2 Cup(c)  apple juice
1   large carrot, peeled and grated
1   large apple, peeled and grated
1 Cup(c)  banana, mashed
1/4 Teaspoon(t)  salt


Preheat the oven to 375° F. Grease 36 mini muffin cups. Combine all the ingredients in a large bowl, and mix well. Fill the prepared muffin cups level with the top, and bake on the center oven rack until the muffins are puffed and golden brown, about 35 minutes. Let the muffins cool in the tin for 10 minutes. Transfer them to a wire rack to cool completely before serving.
