This simple cobbler recipe combines the sweet fruit flavors of peaches and blueberries, with a touch of cardamom and allspice. Serve this warm and topped with vanilla ice cream, or whipping topping.

2 Tablespoon(T)  margarine, melted
3/4 Cup(c)  plain non fat yogurt
1/4 Teaspoon(t)  salt
1/2 Teaspoon(t)  baking soda
1 Teaspoon(t)  baking powder
1/4 Cup(c)  sugar
1 1/2 Cup(c)  cake flour
1/4 Cup(c)  egg substitute, beaten
1/4 Teaspoon(t)  cardamom, ground
1/4 Teaspoon(t)  allspice
1 Tablespoon(T)  lemon juice
1/4 Cup(c)  sugar, divided
1 1/2 Cup(c)  fresh blueberries, or frozen and thawed
4 Cup(c)  fresh peach slices, or frozen and thawed


Preheat oven to 375°F. Combine fruit, 2 tablespoons sugar, lemon juice, and spices in a l0 inch tart pan or quiche dish. Mix well, and spread in an even layer. To make biscuit topping: Combine dry ingredients and sift into a large bowl. Set aside. Whisk together yogurt, margarine, and egg substitute. Stir into dry ingredients all at once, just until blended. Spoon biscuit topping evenly over fruit. Sprinkle with remaining 2 tablespoons sugar. Bake for 30 to 40 minutes or until biscuits are cooked. (If necessary, cover lightly with aluminum foil after 20 minutes to prevent over browning.) Serve warm.
