Recipe Description
Peanut butter is a high quality and inexpensive form of protein when combined with grains. This hearty loaf is great for breakfast on the run. One slice will fill you up.

Ingredients

3/4 Cup(c)  peanut butter
2 Tablespoon(T)  butter
1 1/3 Cup(c)  brown sugar
1   egg
2 1/3 Cup(c)  all purpose flour
1 Teaspoon(t)  baking soda
1/4 Teaspoon(t)  salt
1 Cup(c)  buttermilk

Preparation

Preheat oven to 350° F. Grease an 8 by 4 inch loaf pan with solid shortening and set aside. In large bowl. combine 1/3 cup peanut butter, butter, and 1 cup brown sugar and beat unti blended. Add egg and beat well. In small bowl. combine 1 3/4 cups flour, baking soda and salt. Add dry ingredients alternately with buttermilk to peanut butter mixture. For streusel topping: In small bowl. combine 1/4 cup peanut butter and 1/3 cup brown sugar and blend well. Add 1/3 cup flour and blend until crumbs form. Pour batter into prepared pan and sprinkle streusel over loaf. Bake for 45 to 55 minutes, or until tooth pick co me s out clean when inserted into loaf. Cool on wire rack.
