Nice change to typical geen beans. The blue cheese and pecans really make the recipe special.

1/4 Teaspoon(t)  dijon mustard
1 Tablespoon(T)  olive oil divided
2 Teaspoon(t)  finely chopped shallots
1 Teaspoon(t)  cider vinegar
1/2 Cup(c)  whole pecans
1 1/2 Ounce(oz)  blue cheese
12 Ounce(oz)  green beans


Dressing In bowl combine mustard vinegar, shallot and 1 1/2 teaspoon olive oil. Once mixed set to side. In skillet heat remaining 1 1/2 teaspoons oil over medium heat. Add pecans and salt to taste. Heat pecans stirring frequently until pecans are heated through. Remove pecans from pan pat off with paper towel, and discard remaining oil. In sauce pan heat water until boiling add salt to taste. Cook beans until tender about 3 minutes. Drain and transfer to ice water until cool. Drain well add dressing to beans , crumble blue cheese and 1/2 of pecans. Toss and add remaining pecans and serve.
