Pecan Date Cake

1/2 Cup(c)  pecans, chopped
1 Cup(c)  boiling water
1 Cup(c)  dates, chopped
1 Teaspoon(t)  baking soda
2 1/2 Teaspoon(t)  non dairy butter
1/2 Cup(c)  sucanat
1/4 Cup(c)  unsweetened applesauce
1 1/2 Cup(c)  whole wheat pastry flour
2 Teaspoon(t)  baking powder
1/4 Teaspoon(t)  fine sea salt
1 Teaspoon(t)  cinnamon, ground


Preheat the oven to 350°F (180°C. or gas mark 4). Lightly coat a 9-inch (23-cm) round pie plate with spray. Pour the water over the dates in a medium-size bowl. Stir in the baking soda, and let sit for 10 minutes, or until cooled. In a large-size bowl and using an electric mixer, cream together the butter and Sucanat. Stir in the applesauce and the water and dates mixture. Sift the flour, baking powder, salt, and cinnamon on top of the butter mixture. Fold the dry ingredients into the wet, being careful not to overmix. Fold in the pecans. Pour into the prepared pie plate. Bake for 45 minutes, or until a toothpick inserted into the center comes out clean. Let cool on a wire rack...Yield: One 9-inch (23-cm) cake

Additional notes

If pecans are not your favorite nuts, or dates your favorite dried fruit, feel free to switch them for something closer to your liking, such as walnuts and raisins.
