Recipe Description
Light and fluffy sweet potatoes are whipped with orange juice, and topped with crumbled brown sugar and crunchy pecans.  A traditional holiday dish at it's finest!

1 Teaspoon(t)  salt
1/2 Cup(c)  butter, melted
3/4 Cup(c)  brown sugar, firmly packed
3 Pound(lb)  sweet potatoes, scrubbed
1/2 Cup(c)  orange juice
1 Cup(c)  pecan halves
1 Teaspoon(t)  cinnamon, ground


Cook sweet potatoes in boiling water until tender throughout when pierced with a fork, about 30 minutes.  Drain and let cool briefly, then peel and place in a large bowl.  Using an electric mixer or a potato masher, beat potatoes until almost smooth.  Add eggs, 1/4 cup of the sugar, 1/4 cup of the butter, salt, cinnamon and 1/2 cup of the orange juice.  Continue to beat until moist and fluffy, adding more orange juice if needed.  Spread mixture in a shallow 1 1/2 to 2 quart baking dish.  Top with pecans, sprinkle with remaining 1/2 cup sugar, and drizzle with remaining 1/4 cup butter. (At this point, you may cover
and refrigerate until next day.)  Bake, uncovered, in a 375 degree F oven until heated through, about 20 minutes, or about 40 minutes if refrigerated.
