Pecan Wild Rice With Cherries

If you've been invited to a "turkey and all the trimmings" potluck dinner, help out with the trimmings by bringing this elegant rice pilaf.

Ingredients

1 Cup(c)  pecans, toasted and coarsely chopped
2/3 Cup(c)  scallions, chopped
2/3 Cup(c)  dried tart cherries
1/4 Teaspoon(t)  black pepper
1/4 Teaspoon(t)  salt
2 Teaspoon(t)  marjoram, dried
2 Tablespoon(T)  butter, melted
4 1/2 Ounce(oz)  mushrooms, drained and sliced
1 Cup(c)  carrots, coarsely shredded
2 1/2 Cup(c)  wild rice, rinsed and drained
30 Ounce(oz)  chicken broth

Preparation

In 3 1/2 or 4 quart slow cooker, combine chicken broth, uncooked wild rice, carrots, mushrooms, melted butter, marjoram, salt and pepper.  Cover slow cooker.  Cook on low heat setting for 5 to 6 hours.  Turn off cooker.  Stir in dried cherries, chopped scallions and the toasted pecans.  Cover slow cooker and let stand for 10 minutes.  Serve with a slotted spoon.  If desired, serve with additional scallions.
