Peppermint Chocolate Frozen Treat

This creamy, cool treat is so quick to make! You can easily put it together on a Saturday night and have a surprise ready for the kids to eat on Sunday.

Ingredients

1/4 Teaspoon(t)  pure peppermint extract
2 Tablespoon(T)  coffee liqueur
2 Tablespoon(T)  agave nectar
2 Cup(c)  vanilla soy, or other non dairy yogurt
2 Tablespoon(T)  non dairy butter
1 Cup(c)  non dairy semisweet chocolate chips

Preparation

In a large sized microwave safe bowl, combine the chocolate chips and butter. Melt in the microwave in 45 second increments, stirring often, until smooth. Let cool for a few minutes. Add the yogurt, agave, liqueur, and extract. Using an immersion or a counter top blender, blend all ingredients until perfectly smooth, scraping the sides occasionally. Divide among 4 small sized dessert dishes. Place in the freezer overnight. Thaw for 10 seconds in the microwave when you are ready to enjoy.

Additional notes

Variation: For the true peppermint aficionados out there, increase the extract to 1/2 teaspoon. For a subtler flavor, leave as is. If you're not a fan of peppermint, replace it with 1 teaspoon pure vanilla extract.
