Peppy Paprika Shrimp

Sweet sauted shrimp enhanced by the flavor of paprika. Great to serve alone as an appetizer, or as a main dish paired with fragrant rice, or orzo.

24   jumbo shrimp, uncooked
6 Tablespoon(T)  extra virgin olive oil
1 Clove(clv)  garlic, crushed
1/2 Teaspoon(t)  paprika, or to taste
1/2 Teaspoon(t)  salt
1   lemon wedges, to serve


Remove shell from the center of the shrimp, leaving the heads and tail s intact. Devein the shrimp. Mix together oil, garlic, paprika, and salt in a shallow dish large enough to hold the shrimp in a single layer. Stir together, then add shrimp and turn so they are coated. Cover with plastic wrap and let marinate in the fridge for at least 1 hour. When ready to cook, heat a large, ridged cast iron grill pan over medium-high heat until you can feel the heat rising. Add as many shrimp as will fit without overcrowding the grill pan. Cook about 1 minute until the shrimp curl and the shells turn pink. Turn over and continue cooking for an additional minute, or until cooked through. Drain well on paper towels and keep hot while you continue cooking the remainder. Serve at once with lemon wedges for squeezing over the shrimp.
