This classic salad is easy to make and remains fresh for several days in the refrigerator.

Ingredients

1 Dash(ds)  paprika
2   ribs celery, chopped
6   scallions, sliced
1/4 Teaspoon(t)  pepper, freshly ground
1/2 Teaspoon(t)  kosher salt
2/3 Cup(c)  low fat mayonnaise
2 Tablespoon(T)  lemon juice
1 Teaspoon(t)  celery seed
3 Pound(lb)  red or white skinned waxy potatoes, cut into 1 inch pieces

Preparation

Steam the potatoes until fork tender. Drain in a colander and let cool. Whisk together the celery seed, lemon juice, mayonnaise, salt and pepper. Stir into the potatoes. Toss in the scallions and celery. Garnish with paprika, if desired.
