Recipe Description
Cardamom, saffron, cloves and peppercorns add color and flavor to this tender rice dish.  A delicate and bright side dish suitable for poultry or grilled fish.

Ingredients

1 3/4 Cup(c)  water
1/2 Teaspoon(t)  saffron threads
1/2 Teaspoon(t)  salt
1 Pinch(pn)  black peppercorns
1 Pinch(pn)  whole cloves
3   cardamom pods, bruised
2 Tablespoon(T)  ghee
1 Cup(c)  basmati rice

Preparation

Rinse the rice twice under cold running water and set aside.  Heat the ghee in a large, heavy bottomed pan.  Add the cardamom pods, cloves, and peppercorns and cook, stirring, for 1 minute.  Add the rice and stir fry for an additional 2 minutes.  Add the salt, saffron threads, and water to the rice mixture and reduce the heat.  Cover the pan and let simmer over low heat for 20 minutes, or until all the water has evaporated.  Transfer the rice to a large, warmed serving dish and serve hot.
