Ingredients

1/4 Teaspoon(t)  baking soda
5 1/2 Teaspoon(t)  baking powder
2 Cup(c)  unbleached or all purpose flour
1 Teaspoon(t)  vanilla extract
3/4 Cup(c)  crushed pineapple, well drained
3   egg whites, slightly beaten
2 3/4 Cup(c)  brown sugar, firmly packed
2/3 Cup(c)  margarine, room temperature

Preparation

Preheat the oven to 350° F. Lightly spray a cookie the sheet with vegetable spray. In a large mixing bowl, beat the. margarine and sugar until light and fluffy. Add the egg whites and beat well. Stir in the pineapple and vanilla. In a medium bowl, combine the flour, baking powder and baking soda. Gradually add the flour mixture to the creamed mixture, beating until smooth after each addition. Drop by teaspoonfuls onto the prepared cookie sheet. Bake for 10 minutes, or until done. Cool on wire racks. Ice if desired.
