Recipe Description
This dish can be served as a main course or appetizer.  It's versatility is great, as I have used this dish many times when I have entertained.  The ribs were really a hit at my wife's 40th birthday party.

1 Pinch(pn)  salt, to taste
2 Tablespoon(T)  cornstarch, mixed with 4 tablespoons water
1/2 Teaspoon(t)  paprika
2/3 Cup(c)  water
1/3 Cup(c)  vinegar
1/3 Cup(c)  sugar
16 Ounce(oz)  pineapple chunks
1/2 Cup(c)  soy sauce
2 Slice(sli)  ginger root, minced
1 Clove(clv)  garlic
3 Tablespoon(T)  oil
3 Pound(lb)  spareribs, lean and small


Cut ribs apart and chop with a cleaver into 1 inch pieces.  Heat oil in a large skillet.  Add garlic, ginger root and ribs.  Brown ribs and drain fat from skillet.  Add soy sauce, pineapple juice (from can of pineapple chunks), sugar, vinegar, water and paprika.  Heat to boiling and then simmer for 45 minutes, covered.  Add salt to taste, pineapple chunks and cook until thoroughly heated.  Stir cornstarch and water and add gradually to skillet, stirring until sauce is thickened.  Serve over rice.
