It's easy being green with this salad! A great source of fiber, vitamin C and potassium, avocados are also high in good for you monounsaturated fats, so dig into the fruit.

1/4 Cup(c)  pistachios, chopped
3 Cup(c)  long grain white or brown rice, cooked and chilled
1   ripe avocado, peeled and mashed
1/2 Teaspoon(t)  thyme, dried
1 Tablespoon(T)  fresh curly parsley, chopped
1 Tablespoon(T)  fresh basil, chopped
1/2 Teaspoon(t)  fine sea salt
1/2 Teaspoon(t)  black pepper, cracked
1/4 Cup(c)  scallion, finely chopped
2 Tablespoon(T)  seasoned rice vinegar
2 Tablespoon(T)  extra virgin olive oil
2 Tablespoon(T)  fresh lemon juice


Combine the lemon juice, oil, vinegar, scallions, pepper, salt, basil, parsley, thyme and avocado. Stir in the rice and pistachios. Serve chilled, preferably the day it is made to avoid oxidation (avocados turn brown quickly).
