Recipe Description
Select only ripe prune plums, or plums of any small variety.  Remember to remove the pits and leave sugar cubes in their place!

3/4   powdered sugar
1/2 Cup(c)  butter, melted
1 Pound(lb)  small prune plums
1/8 Teaspoon(t)  salt
3 Cup(c)  all purpose flour
3/4 Cup(c)  half and half
2   eggs, lightly beaten


In a large bowl, combine eggs and half and half or milk.  Beat until frothy.  Gradually stir flour and salt into egg mixture to make a stiff dough.  On a lightly floured surface, knead dough about 10 minutes or until dough is smooth and elastic.  Roll out dough to 1/2 inch thickness.  Cut dough into 3 inch squares.  Combine dough trimmings.  Reroll and cut into 3 inch squares.  Repeat until all dough is used.  Remove pits from plums by slicing each fruit halfway around pit edge and pulling out pit.  Carefully replace each pit with a small sugar cube, or half of a larger sugar cube.  Place a sugar cube filled plum on center of a dough square.  Tightly fold dough square completely around plum, crimping dough edges together to prevent water from seeping into the dumpling.  Repeat with remaining plums and squares.  Bring 5 inches of water to a boil in a large pot over medium high heat.  Place 4 or 5 dumplings at a time in boiling water.  Cook 9 to 10 minutes, turning at least once, or until dough is cooked through.  Using a slotted spoon, gently transfer cooked dumplings to a colander.  Rinse with hot water.  Repeat with remaining dumplings.  Drain dumplings well, then arrange on a heated platter.  Spoon melted butter or margarine over dumplings.  Sift powdered sugar over dumplings.  Serve hot or warm.
