Arrack is a fiery liquor, often flavored with anise, that can be found in the imported foods sections of many large grocery stores.

Ingredients

1/2 Teaspoon(t)  arrack or other flavoring
7   egg whites
2 Teaspoon(t)  baking powder
1 Cup(c)  all purpose flour
1 Cup(c)  sugar
1 Tablespoon(T)  unsalted butter, at room temparture
1 1/4 Quart(q)  water
2 1/2 Cup(c)  poppy seeds, dried
1 Tablespoon(T)  unsalted butter, at room temparture

Preparation

Place poppy seeds in a large bowl. Bring water to a boil in a medium saucepan. Pour boiling water over poppy seeds. Stir until all poppy seeds are soaked. Cover with plastic wrap and let stand overnight at room temperature. Carefully strain through a fine mesh strainer. Discard liquid. Grind poppy seeds through a grinder into a medium bowl. Grind two more times. Preheat oven to 350 degree F. Grease a round 10 inch springform pan. In a large bowl, beat butter and sugar until creamy. Combine flour and baking powder in a small bowl. Beat flour mixture into butter mixture. In a large bowl, beat egg whites until stiff, adding arrack or other flavoring. Fold egg whites and ground poppy seeds into butter mixture. Pour batter into greased spring form pan. Bake 55 to 60 minutes, or until a wooden pick inserted in center comes out clean. Let cool 4 to 5 minutes. Remove pan sides. Let cake cool on a rack.
